Meskouta Cake
Description
This orange, butterless cake is simple to make and contains a natural sweetness that allows it to be served plain (or it can be glazed, or lightly sprinkled with honey or confectioners sugar).
Ingredients
Optional glaze: 1 tablespoon of orange juice, a sprinkle of orange zest, and 1 cup powdered sugar

The cake
- Heat oven to 350 degrees and prepare a loaf pan (use butter and flour or non-stick spray to coat sides). You can also use a bundt pan!
- Zest and juice the oranges.
- Whisk the flour, baking powder, and salt together.
- In a stand mixer, beat the eggs and sugar together until light yellow and thick.
- Add the vegetable oil, gradually, until incorporated.
- Add the orange juice and zest to the egg mixture and mix until smooth.
- Gradually add in the flour mixture, beat until smooth (30 seconds)-careful to not overmix.
- Pour into pan and bake for 40-50 minutes (use a toothpick to test doneness). Don't open the door before 40 minutes have passed to keep the cake from sinking.
- Let cool in the pan for 5 minutes and then transfer to a wire rack to cool completely.

Optional glaze:
- Stir a tablespoon of the orange juice and some zest in with 1 cup powdered sugar. Pour over slightly cooled cake.
