Description

This orange, butterless cake is simple to make and contains a natural sweetness that allows it to be served plain (or it can be glazed, or lightly sprinkled with honey or confectioners sugar).
 

Ingredients

Optional glaze: 1 tablespoon of orange juice, a sprinkle of orange zest, and 1 cup powdered sugar

Instructions

  1. The cake
    1. Heat oven to 350 degrees and prepare a loaf pan (use butter and flour or non-stick spray to coat sides). You can also use a bundt pan!
    2. Zest and juice the oranges. 
    3. Whisk the flour, baking powder, and salt together. 
    4. In a stand mixer, beat the eggs and sugar together until light yellow and thick. 
    5. Add the vegetable oil, gradually, until incorporated. 
    6. Add the orange juice and zest to the egg mixture and mix until smooth. 
    7. Gradually add in the flour mixture, beat until smooth (30 seconds)-careful to not overmix. 
    8. Pour into pan and bake for 40-50 minutes (use a toothpick to test doneness). Don't open the door before 40 minutes have passed to keep the cake from sinking. 
    9. Let cool in the pan for 5 minutes and then transfer to a wire rack to cool completely. 
  2. Optional glaze: 
    1. Stir a tablespoon of the orange juice and some zest in with 1 cup powdered sugar. Pour over slightly cooled cake.
