Dashi (you can sub water or vegetable stock in for the Dashi)

  1. The Pancake

    *Makes one large pancake but you can make several smaller ones if you wish!

    1. In a large bowl, whisk together the dry ingredients (flour, salt, ginger, baking powder).
    2. Fold the dry ingredients together with the eggs and dashi broth until well incorporated. Make sure to not over-mix. I recommend using a chopstick to stir. 
    3. Fold in the cabbage, carrot, and sweet potato along with some of the pickled ginger.
    4. Let the batter rest for 30 minutes. 

    If using squid and/or bacon:

    5. In a large cast-iron skillet, heat a thin layer of oil until it begins to shimmer, then add a slice or 2 of the bacon. Let the bacon cook until some of the bacon fat renders. Add the squid and cook until no longer see-through.

    6. Move the bacon and squid to the center and ladle the batter on top (give a quick stir before adding the batter).

    7. Cook the pancake for 4-5 minutes on each side. To flip, flip like you would a pancake. Or, slide it off onto a plate and then use the plate to help flip it back into the pan (way easier). 

    8. Remove the pancake from the pan and drizzle some of the Kewpie mayonnaise and Okonomiyaki sauce over the top.

    9. Garnish with the remaining scallions, bonito flake, and pickled ginger. 

    If NOT using squid and/or bacon:

    5. In a large cast-iron skillet, heat a thin layer of oil until it begins to shimmer.

    6. Ladle the batter on top (give a quick stir before adding the batter).

    7. Cook the pancake for 4-5 minutes on each side. To flip, flip like you would a pancake. Or, slide it off onto a plate and then use the plate to help flip it back into the pan (way easier). 

    8. Remove the pancake from the pan and drizzle some of the Kewpie mayonnaise and Okonomiyaki sauce over the top.

    9. Garnish with the remaining scallions, bonito flake, and pickled ginger. 

  2. Dashi
    1. Combine the water with the mushrooms and bring to a boil. 
    2. Simmer for 15 minutes. 
    3. Remove from heat and stir in bonito and kombu. 
    4. Strain.
